Another top notch meal at the Publican on Friday night: cheesy, crackly chicharrones ($5); a plate of the daily pickles with asparagus, cucumbers + onions ($4); frites with Louis's eggs ($7); charcuterie plate by Publican Quality Meats featuring the turkey-Manhattan terrine, head cheese, pork pie, nduja, morteau sausage, pickles and mustards ($15); sand dabs; whole farm chicken from Slagel Family Farm in Fairbury, Illinois with summer sausage + frites ($30); golden trout with morel mushrooms, thyme + a pan vinaigrette ($32).
